Within the grounds, there are three main buildings, El Pazo (country house), the Vaquería (dairy) and the Bodega Vieja (old winery), as well as a Palomar (pigeon loft) and an Hórreo (granary). In the first written records, dating back to the 15th century, the nobles of Soutomaior appeared to be the owners of the House and the Torre de Fontán, old name for the current Pazo Baión. Over the years, there have been a series of well-known families that have lived in the most emblematic Pazo of Arousa, such as the Figueroa, the Sarmiento or the Dukes of Priegue, all of which left behind the personal touches they made to the property. The architectural refurbishment of the old Pazo, in the early 20th century, was carried out by a Galician immigrant who had returned from America. During the 1970s, Pazo Baión housed the first technical vineyard of Albariño within Galicia, which later became the fount of knowledge of what nowadays is one of the most prestigious Designations of Origin. Having had several different owners, on 16 July 2008, it was purchased by the "Condes de Albarei" winery, the flagship of the Rías Baixas Designation of Origin.
