Since the revolution within the Galician wine industry caused by the constitution in 1980 of the Rías Baixas Designation of Origin, José María Fonseca, the current president, started to see how things should be done and, from his administration job, he manages and supports courses on grape growing and wine production, besides a large number of collaborations related to the art of wine production.

From a private initiative and in conjunction with the Viñedos do Rosal, S.A. and Adegas das Eiras, S.A. foundation, the founder members voiced their intention and eagerness to put special emphasis on the original O Rosal wines. The winery's philosophy was that Albariño, being a very noble variety as it is, could become greater if it was grown in combination with other vine stocks. These new stocks, always autochthonous ones, would give it new nuances and provide the O Rosal wines with a higher category than the one it already had.

In 1990, the winery was founded and produced a very first harvest of 37,000 bottles of Terras Gauda'90, using the grapes which belonged to the wine producing members of the area. At the same time, their own plantations were started up, always taking into account the concept of protecting the identity of the O Rosal wine.

In 1991, once the winery had specified their commitment to singularity, the first harvest of their own Albariño variety was produced, under the name Abadía de San Campio.

Over time, both of the initial companies became one. Given the prestigious nature of their first brand and the acknowledgement they had obtained, they adopted the name Bodegas Terras Gauda, S.A.
