The process begins with the grape harvest –manually performed–, the selection of the best racemes, and the depositing in 18-kg / 40-pound boxes. Once in the cellar, the sticks and twigs are removed from racemes. Then, the grapes are brought into a pneumatic press, where they endure a pressure not above 2 kg / 4∙41 pounds. The grape juice is poured into stainless steel tanks. A controlled process of fermentation starts here, at 18º. A second fermentation takes place, which is stabilized at -4º C, or -5º C / 24∙80F or 23F for seven days. Finally, the wine is filtered and allowed to rest until bottling. Accordingly, the wine produced by this procedure is as natural as possible.
